Lollypop chicken wing
oil, for frying
24 chicken cut chicken wings
Fire Sauce:
1 oz canola oil
.5 gram 75-80% TCH concentrate
1/4 cup honey
1/2 cup packed brown sugar
1.5 cup hot sauce
1/2 lb butter
1 tablespoon Worcestershire sauce
French chicken wing by deboning small bone and removing from joint
Toss chicken wings in olive oil salt/pepper; and Worcestershire
roast wings in oven 325F for 12-15 min
At time of service fry chicken until golden
For the sauce: Heat hot sauce, brownsugar, butter and honey.
Over very low heat melt concentrate into canola oil.
Remove all sauce ingredients from heat and blend infused canola oil with remaining sauce ingredients.
Fry and toss wings right before service, last minute.
