Infused Mayo 10mg/tbsp

Basic Mayo

 

6 oz egg yolk

​​3/4 oz salt

2 oz white vin​​

oz canola oil

2 oz water ​​2 tsp ground white pepper

1/4 oz dry mustard

2 oz lemon juice

11oz infused olive oil-25mg (see forum recipe)

 

 

Wisk yolks, vin, water, mustard and salt until slightly foamy

Add oil gradually in a thin stream, whipping constantly until all oil is incorporated and the mayo is thick

Season with salt, pepper and lemon juice as needed

 

10mg per 1 tbsp serving.  Apron 120 servings per recipe.
